Ingredients
1 Medium Onion
1 Garlic Clove
1 bunch Asparagus
1 container silken tofu
1 container vegetable stock (or make your own!)
2 Tablespoons olive oil
1 tablespoon Milford Spice Company Adobo Lime Rub
Directions
Chop garlic and onion
Heat garlic and onion in olive oil over medium heat in stock pot
Add Adobo Lime Rub
Add cleaned and chopped asparagus, cook for approximately five minutes
Add vegetable stock and let simmer until asparagus is tender
Use immersion blender to blend to desired consistency
Add silken tofu and blend until creamy
You may substitute just about any veggie or add more than one - delicious with carrots too!
