Ingredients

2 Medium Red Onions

2 Cups White Vinegar

1 Cup Sugar

Spices of your choice, we like 1 whole Star Anise, 5-10 coriander seeds, 5-10 juniper berries, 1/4 teaspoon habanero flakes

 

Directions

Finely slice red onions

Blanch onions in boiling water for approximately two minutes

Drain Onions in colander and set aside

Bring vinegar, sugar and spices to a boil in separate sauce pan

Reduce to a simmer and simmer 5 minutes, add onions and simmer an additional three minutes

Remove from heat

Let cool slightly and then put in your favorite container - we use a canning jar

Can be stored for 1-2 weeks in the refrigerator

Delicious on sandwiches!  Great on boiled meats!
