Ingredients

8 Tbsp. Butter

1 Large Yellow or White Onion

2 Garlic Cloves, Minced

1 Apple, cored and finely chopped

1-1/2 cups Vegetable Broth

1/2 can of Coconut Milk

1 Tbsp. MSC Madras Curry (or to taste)

Directions

Melt butter in skillet over medium heat.  Add onion & garlic, cook until just starting to brown.  Add apple, cover and simmer over low heat for 15 minutes, stirring occasionally to prevent burning.  Add broth, stir, and simmer for an additional 15 minutes.  Add coconut milk and bring to a boil for just a few minutes, stirring constantly.  Remove from heat and add to your favorite veggies or meat and serve over rice.
