Espresso Skirt Steak with Black Beans and Cilantro Rice

Ingredients

4 Medium-Sized Skirt Steaks

2 tsp. MSC Mark's Espresso Rub Original or Mark's Expresso Rub 2

1 Can Black Beans

1 Medium Onion

2 Garlic Cloves

1 Tbsp. Olive Oil

1 Tbsp. Butter

1 Cup Long Grain White Rice

2 Cups Water

2 Tbsp. Lime Juice

1/2 Cup Fresh Cilantro, Chopped

MSC 30,000 Scoville Cayenne Pepper

Directions

For Rice:

Bring the water to a boil, stir the butter and rice into the water.  Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.  Prior to serving, stir in the lime juice and cilantro.

Black Beans:

Cook chopped garlic and onion in olive oil over medium heat until translucent.  Drain and rinse black beans and add to pan.  Heat thoroughly.  Beans can be mashed lightly if desired to thicken.  Season with MSC 30,000 Scoville Cayenne, salt, and pepper to taste.

Skirt Steak:

Season steaks liberally with MSC Mark's Espresso Rub and rub into steaks thoroughly.  Grill to desired temperature.  Serve over rice with black beans on the side.
